SAVORY CRAB QUICHE

INGREDIENTS:
3 eggs, slightly beaten
1 cup sour cream
1/2 tsp Worcestershire sauce
3/4 tsp Cajun seasoning
1/2 tsp savory
1 white onion, sliced paper-thin
3 tbsp unsalted butter
1 cup shredded Swiss cheese
1/2 lb fresh crabmeat
1 9-inch pastry shell, baked
Parsley for garnish
Preheat oven to 300°. Saute onions in butter until they begin to brown. In a large bowl, combine eggs, sour cream, Worcestershire sauce, Cajun seasoning and savory. Stir in cheese, crabmeat, and onions. Pour into pastry shell and bake 55-60 minutes or until a knife inserted in center comes out clean. Serve hot, garnished with parsley.

PEACH & BLUBERRY COMPOTE

INGREDIENTS:
16 oz sliced frozen peaches, thawed
8 oz frozen blueberries, thawed
2 tbsp butter
2 tbsp brown sugar
1/4 cup brandy
Whipped cream
Mint sprigs
In a non-stick frying pan, melt butter and sugar over medium heat. Add peaches and toss to coat. Stir in brandy and cook until peaches are tender and sauce is reduced, remove from heat. Stir in blueberries and serve in parfait glasses with a dollop of whipped cream on top and garnished with a mint sprig.
